I will give an overview of realizability (and unrealizability) of pleated surfaces in various hyperbolic 3-manifolds, introduce simplicial hyperbolic surfaces and (time allowing) Canary's sweepout arguments. The references are the following:

For pleated surfaces, try Thurston's notes "Geometry and topology of three-manifolds"  (Sections 8.8-8.10; Ch 9) and Canary Epstein Green (Chapter I.5).

For simplicial hyperbolic surfaces, try the exposition in Minsky's "Classification of punctured-torus groups" (Sec. 5) for a first reading and Canary's "A covering theorem and its applications" has the full proof.
